Perfect Pork and Sauerkraut

Ingredients
German Grill Spice:
2 TBSP Mustard Powder
2 tsp thyme
2 tsp curry powder
2 tsp paprika
2 tsp smoked paprika
1/2 tsp cayenne pepper
1 tsp black pepper
2 TBSP Kosher Salt
3 lb Pork Roast
12 oz beer
1 lb Sauerkraut
Directions
1. Mix all the spices together and rub liberally all over the roast. Cover and allow to marinate for 12 hours.
2. In a hot pan with a little oil sear the pork on all sides.
3. Transfer to a slow cooker and pour the beer around. Place the cover on top and cook on low for 5 hours.
4. Uncover and add the sauerkraut cook 1 hour more, uncovered, on low.
5. Serve with bread dumplings, spaetzle or mashed potatoes.
