Pesto Provolone Grilled Cheeses
Grilled cheese sandwiches made with provolone and a homemade spinach pesto sauce.

Ingredients
- 2 cups (about 2 ounces) fresh baby spinach leaves
- 2 TBSP pine nuts
- 1 garlic clove, peeled
- 2 TBSP freshly grated Parmesan cheese
- 1 TBSP olive oil
- salt & pepper
- 4 slices hearty Italian bread
- 2 slices of provolone cheese
- 1 TBSP unsalted butter, softened

Directions
- Add the spinach, pine nuts, garlic, and Parmesan to a food processor or blender and blend into a paste. Transfer mixture to a bowl and stir in the olive oil, dash of salt, and dash of pepper. Taste the pesto sauce and season with additional salt & pepper if necessary.
- Lay out the bread slices and spread the pesto sauce evenly on one side of each slice of bread. Lay a slice of provolone on top of the pesto on 2 of the slices of bread then lay the remaining slices of bread pesto-side down on to the provolone (the sandwiches should be: slice of bread - pesto - provolone - pesto - slice of bread).
- 3 Spread the butter evenly on the outside top and bottom of the sandwiches.
- Heat a large pan over medium-heat. When the pan is hot lay the sandwiches in the pan and cook until browned on one side, about 4 minutes.
- Carefully flip the sandwiches over and cook until sandwiches are browned on the other side, about 4 more minutes.
