Poblano Rice with Cilantro & Lime
An easy to make Mexican rice side dish made with poblano pepper, red onion, garlic, cilantro & lime.

Ingredients
- 1 poblano pepper, stemmed seeded and chopped
- 3 cloves garlic, minced
- 1 cup uncooked long rain rice
- 1 cup diced red onion
- 1 1/2 cups chicken broth
- 1 TBSP olive oil
- 1/2 cup fresh cilantro
- 1 TBSP lime juice
Directions
- In a medium size saucepan bring broth and pepper a boil over medium heat. Reduce heat to low, cover and simmer 10 minutes. Remove from heat and pour into a blender or food processor along with the cilantro and lime juice and pulse until smooth.
- In the now empty saucepan heat the oil over medium heat, add the rice, onion and garlic and cook 2 minutes stirring constantly.
- Pour the liquid from the blender in with the rice and bring to a boil. Cover the pan, reduce the heat to low and cook covered for 10 minutes, do not remove the lid. After the 10 minutes, with the lid still on, turn off the heat and let rest for 20 minutes, once again do not remove the lid.
- Now you can remove the lid, fluff the rice with a fork and serve.
