Ingredients

1 pound frozen corn, thawed
1/2 cup small diced red peppers
1/4 cup small diced red onions
1/4 cup small diced jalapeno
1/4 cup chopped cilantro
1 TBSP fresh squeezed lime juice
2 TBSP olive oil
1/4 tsp granulated garlic
1/2 tsp kosher salt
Pinch of black pepper


Directions

1. Rinse the corn under cold running water thoroughly, for about 1 minute. Then drain the corn well while preparing the rest of the ingredients.

2. In a large mixing bowl combine the red peppers, red onions, jalapenos, cilantro, lime juice, olive oil, granulated garlic, salt and pepper and stir.

3. Once the corn is well drained add it to the bowl and stir together. Taste and season with additional salt & pepper to taste.

4. Serve immediately or cover and refrigerate for later use.
