Quick & Easy Spicy Corn Salsa
Corn, red peppers, onion, jalapeno, and cilantro tossed with lime juice and olive oil.

Ingredients
- 1 pound frozen corn, thawed
- 1/2 cup small diced red peppers
- 1/4 cup small diced red onions
- 1/4 cup small diced jalapeno
- 1/4 cup chopped cilantro
- 1 TBSP fresh squeezed lime juice
- 2 TBSP olive oil
- 1/4 tsp granulated garlic
- 1/2 tsp kosher salt
- Pinch of black pepper

Directions
- Rinse the corn under cold running water thoroughly, for about 1 minute. Then drain the corn well while preparing the rest of the ingredients.
- In a large mixing bowl combine the red peppers, red onions, jalapenos, cilantro, lime juice, olive oil, granulated garlic, salt and pepper and stir.
- Once the corn is well drained add it to the bowl and stir together. Taste and season with additional salt & pepper to taste.
- Serve immediately or cover and refrigerate for later use.
