INGREDIENTS

  • 1 small head red cabbage, cored and finely shredded
  • 2 medium carrots, peeled and grated
  • 3 TBSP apple cider vinegar
  • 3/4 cup mayonnaise
  • 1 TBSP Dijon mustard
  • salt & fresh ground black pepper



DIRECTIONS

  1. In a large bowl whisk together to vinegar, mustard, mayonnaise, 1/4 tsp salt, and 1/4 tsp pepper.
  2. Add the cabbage and carrot to the bowl and mix with the vinegar, mayo, mustard, 1/4 tsp salt, and a dash of pepper until well combined. Season with extra salt and pepper to taste if necessary.
  3. Cover and refrigerate for at least 4 hours to allow the flavors to meld.
