1 small head red cabbage, cored and finely shredded
2 medium carrots, peeled and grated
3 TBSP apple cider vinegar
3/4 cup mayonnaise
1 TBSP Dijon mustard
salt & fresh ground black pepper
DIRECTIONS
In a large bowl whisk together to vinegar, mustard, mayonnaise, 1/4 tsp salt, and 1/4 tsp pepper.
Add the cabbage and carrot to the bowl and mix with the vinegar, mayo, mustard, 1/4 tsp salt, and a dash of pepper until well combined. Season with extra salt and pepper to taste if necessary.
Cover and refrigerate for at least 4 hours to allow the flavors to meld.
