3 medium red beets, washed and ends cut off
1 medium gala apple, cored and cut into bite size pieces
1 TBSP olive oil
1/4 tsp salt
dash pepper
1/4 cup chopped walnuts
1/4 cup crumbled blue cheese


1. Preheat oven to 350°F.

2. Wrap each beet tightly in aluminum foil. Place the wrapped beets in the preheated oven and roast for 1 hour or until tender. Unwrap beets and allow to cool. When beets are cool, peel off the skin and cut the beets into bite size pieces.

3. Add the beets and apples to a large mixing bowl. In a separate small bowl stir together the olive oil, salt, and pepper then pour over the beets and apples and toss to coat. Sprinkle on the walnuts and blue cheese.
