Roasted Beet and Chive Cream Cheese Dip
An easy cream cheese based dip made with roasted beets, chives and lemon juice.

Ingredients
- 2 medium beets, washed and ends cut off
- 8 ounces cream cheese, softened
- 1 TBSP freshly squeezed lemon juice
- 2 tsp freshly chopped chives
- salt & pepper
- Crackers, pita chips, cut veggies, etc. for serving

Directions
- Preheat oven to 350°F.
- Wrap the beets tightly in aluminum foil. Place the wrapped beets in the preheated oven and roast for 1 hour or until tender. Unwrap the beets and allow to cool. When beets are cool, peel off the skin and roughly chop.
- Add the beets, cream cheese, lemon juice, and 1/4 tsp salt to a food processor and pulse until smooth.
- Transfer beet mixture to a bowl and stir in the chives. Season with salt and pepper to taste.
