- 1 TBSP red wine vinegar
- 1/4 tsp salt
- 1 cup grape tomatoes, quartered
- 1 medium red bell pepper, chopped
- 1 medium cucumber, diced
- 3 scallions (green onions), sliced
- 1 cup crumbled feta cheese
- 1/4 cup freshly chopped parsley

Directions
- In a large bowl whisk together the olive oil, vinegar, and salt.
- Add the tomatoes, bell pepper, cucumber, and scallions. Toss to combine then cover and refrigerate for at least 1 hour.
- Remove the salad from the fridge and sprinkle on the feta cheese and parsley before serving.
