INGREDIENTS
2 TBSP olive oil
1 TBSP red wine vinegar
1/4 tsp salt
1 cup grape tomatoes, quartered
1 medium red bell pepper, chopped
1 medium cucumber, diced
3 scallions (green onions), sliced
1 cup crumbled feta cheese
1/4 cup freshly chopped parsley
CONVERSION CALCULATOR
DIRECTIONS
In a large bowl whisk together the olive oil, vinegar, and salt.
Add the tomatoes, bell pepper, cucumber, and scallions. Toss to combine then cover and refrigerate for at least 1 hour.
Remove the salad from the fridge and sprinkle on the feta cheese and parsley before serving.
