Simple Carrot and Onion Rice Pilaf

Ingredients
- 1 cup Basmati rice
- 1 onion, chopped
- 1/2 cup diced carrots
- 1 1/2 cups chicken broth
- 1/2 tsp salt
- 1/2 tsp fresh ground pepper
- 1 TBSP canola oil
- 1 TBSP unsalted butter
- 1 bay leaf
Directions
- In a large saute pan melt the butter with the oil over medium heat.
- Add the onion and carrots and cook, stirring occasionally, about 5 minutes.
- Stir in the rice, salt and pepper and cook about 2 minutes, stirring occasionally.
- Add the chicken broth and bay leaf. Stir and bring to a boil.
- Reduce heat to low and cover. Cook for about 20 minutes or until the rice has absorbed the liquid.
- Remove the bay leaf and serve.
