Simple Pork Bolognese with Rigatoni

Ingredients
1 lb ground pork
1 medium onion, chopped
3/4 cup chopped carrots
3/4 cup chopped celery
8 oz white mushrooms, chopped
3 large garlic cloves, chopped
1 cup whole milk
32 oz tomato sauce
1 TBSP vegetable oil
1 tsp parsley
1/2 tsp basil
1 TBSP oregano
1 bay leaf
1/2 tsp salt
1/4 tsp pepper
12 oz rigatoni
fresh grated parmesan cheese
Directions
1. Heat the oil in a large dutch oven over medium heat. Add the onion, carrot and celery and cook until tender, about 5 to 7 minutes, stirring occasionally.
2. Stir in the mushrooms and garlic and cook for another 2 minutes, or until garlic becomes fragrant.
3. Stir in the salt, pepper and pork. Cook for about 8 minutes stirring and breaking up the pork as it cooks.
4. Turn the heat to medium high and add the tomato sauce, parsley, basil, oregano and bay leaf.
5. Stir in the milk. When mixture begins to boil reduce heat to low and simmer uncovered for 1 hour, stirring occasionally.
6. Prepare rigatoni according to package directions and mix into the bolognese sauce.
7. Serve topped with the freshly grated parmesan.
