Simple Rustic Veggie Barley Soup

Ingredients
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cups chopped onion
- 1 cup chopped red peppers
- 1 TBSP granulated garlic
- 1/2 cup barley
- 5 cups vegetable broth
- 5 cups water
- 1/2 tsp basil
- 1 bay leaf
- 1/2 tsp oregano
- 1/8 tsp thyme
- 1 tsp parsley
- 1/8 tsp white pepper
- 1 cup frozen spinach
- salt and pepper

Directions
- Put all ingredients except for spinach in a large pot and bring to a boil over medium-high heat.
- Reduce heat and simmer, stirring occasionally, partially covered for 60 to 90 minutes or until barley is tender.
- Stir in spinach.
- Add salt and pepper and adjust seasonings to taste.
