Skillet Pork and Sweet Peppers

Ingredients
2 TBSP olive oil
salt & pepper
2 pounds boneless pork shoulder, cut into 1-inch pieces
2 red bell peppers, seeded and sliced
2 green bell peppers, seeded and sliced
Directions
1. In a large bowl mix together the oil, 1 tsp salt, and 1/4 tsp pepper until well combined. Add the pork pieces to the bowl and stir until evenly coated in the oil.
2. Heat a large saute pan over medium-high heat. When the pan is hot add the pork in a single layer and cook without moving until well browned on the bottom, about 6 minutes.
3. Stir the pork and cook, stirring occasionally, for about 4 more minutes then transfer the pork to a plate and set aside (leaving any fat in the pan).
4. Stir in the sliced bell peppers and place a lid on the pan. Cook, stirring occasionally, until the peppers begin to soften and pork is cooked through, about 8 minutes.
5. Taste and season with additional salt & pepper if necessary.
