Ingredients

4 pounds bone-in pork shoulder
salt & pepper
2 TBSP peanut oil
1 large yellow onion, thinly sliced
1 cup Dijon mustard
1/2 cup yellow mustard
1/2 cup raw honey
1 TBSP soy sauce
2 tsp garlic powder
1 tsp paprika

Directions

1. Pat the pork shoulder dry with paper towels and season generously all over with salt & pepper.

2. Heat the peanut oil in a large pan over medium-high heat. Sear the pork until well browned on all sides, 4 to 5 minutes per side. Transfer the seared pork fat side up into a 5 to 6 quart slow cooker.

3. Add the onion to the hot pan and cook until onion begins to soften, about 2 minutes. Add the mustards, honey, soy sauce, garlic powder, and paprika to the pan and stir to combine. Using a wooden spoon scrape the bottom of the pan to release any stuck on bits. Scrape the contents of the pan into the slow cooker over the pork.

4. Cover the slow cooker and cook on LOW for 7 to 8 hours or until pork is pull-apart tender.

5. Transfer the pork from the slow cooker to a large dish. Using two forks shred the pork and discard the bone. Return the pork to the slow cooker and stir to combine with any liquid still in the slow cooker. Season with salt & pepper to taste.
