Smoked Sausage and Cabbage with a Mustard Vinaigrette

Ingredients
- 1 head green cabbage, finely cut
- 1 onion, diced
- 1 lb smoked sausage cut into 2 inch pieces
- 1 lb red potatoes, quartered
- 1 tsp kosher salt
- 1/4 tsp mustard powder
- 1/2 tsp coriander
- 1/4 tsp dill
- 1 bay leaf
- 2 tsp apple cider vinegar
- 1 tsp cooking oil
- 8 oz Mustard Vinaigrette Dressing

Directions
- Boil potatoes until tender, drain and set aside.
- Brown the sausage in a dutch oven with the oil over medium heat. Add the cabbage and onion and cook until the cabbage has wilted, stirring often.
- Stir in the salt, mustard powder, coriander, dill and bay leaf and cook for 3 minutes.
- Take off the heat and add the vinegar.
- Serve the cabbage and sausage over the boiled potatoes and drizzle with mustard vinaigrette.
