Smoked Turkey, Spinach, Apple and Blue Cheese Salad

Ingredients
- 1/2 lb baby spinach leaves
- 1/4 cup red onion, very thinly julienne
- 1 apple cored, diced ( I used a Tango apple and it was fabulous)
- 2 slices smoked turkey, rolled and thinly sliced
- 2 TBSP blue cheese crumbled
- 1 oz of your favorite fruity vinaigrette I used an Apple vinaigrette, but lemon would be nice too
Directions
- Place all ingredients, but the turkey in a large bowl and toss with tongs.
- Separate in 3 serving bowls and top with turkey. Serve it up.
