Directions
- Preheat the oven to 350°F.
- Place the chicken thighs in a large mixing bowl. Drizzle the olive oil over the chicken then sprinkle on the smoked paprika, cumin, salt and black pepper. Toss the chicken until everything is evenly coated.
- Spread out the chicken thighs, skin-side up, on a large rimmed baking sheet.
- Bake the chicken thighs in the preheated oven for 20 minutes.
- Increase the oven temperature to 425°F and continue to bake the chicken until cooked through and skin is crisp, about 15 more minutes.
- Remove the chicken from the oven and allow to rest for 10 minutes before serving.
