1 small heart of romaine, chopped
1 flour tortilla
1/4 cup cucumber, peeled seeded and diced
1/4 cup frozen corn, thawed and rinsed
1 TBSP green olives, sliced
1/4 cup sharp cheddar cheese, shredded
1/2 avocado, diced
1/2 cup Pico de Gallo
1 tsp cooking oil
salt and pepper


1. Preheat oven to 350° F.

2. Brush both sides of tortilla with cooking oil and cut into 2 inch by 1/2 inch strips. Place on a baking sheet, sprinkle with salt and pepper and bake for 10 minutes.

3. Place the romaine in a bowl and add the cucumber, corn, olives, cheese, avocado and pico de gallo.

4. Top with the crispy tortilla strips and serve.
