Spanish Pork and White Bean Stew
A Smoky Spanish stew made up of ground pork and white beans.

Ingredients
- 10 ounces dried Great Northern Beans, thoroughly rinsed
- salt & freshly ground black pepper
- 1 TBSP olive oil
- 1 pound ground pork
- 2 garlic cloves, minced
- 3 TBSP mayonnaise
- 1/4 tsp red wine vinegar
- 1 tsp smoked paprika
Directions
- Add the beans and 6 cups of water to a large saucepan over medium-high heat and bring to a boil.
- When the water begins to boil cover then pan and reduce the heat to medium-low. Simmer the beans over medium-low heat for about 1 hour.
- Drain the beans then set about 2/3 of the cooked beans to the side and place the other 1/3 of the beans in a bowl and mash very well using the back of a fork.
- Heat the oil in a dutch oven over medium-high heat.
- Add the pork to the dutch oven and cook, breaking up the pork as it cooks, until browned, about 6 minutes.
- In a small bowl make an aioli by mixing together the garlic, mayonnaise, and vinegar then set aside.
- Stir in the beans, mashed beans, aioli, smoked paprika, 2 cups water, 2 tsp salt, and 1/4 tsp black pepper in with the pork until well combined.
- Reduce the heat to medium-low and simmer, stirring occasionally, until the stew thickens a bit, about 5 minutes.
- Season with salt & pepper to taste.
