Spicy Brussels Sprouts and Eggs

Ingredients
1 TBSP olive oil
1 yellow onion, peeled and chopped
1 pound brussels sprouts, trimmed and chopped
2 garlic cloves, peeled and minced
1 tsp crushed red pepper flakes
salt & pepper
4 large eggs
Directions
1. Heat a large skillet until very hot over medium heat. Add the oil and tilt the pan to coat the bottom and sides of the pan. Add the onion and cook, stirring occasionally, until onions begin to soften, about 4 minutes.
2. Add the brussels sprouts, garlic, red pepper flakes, and 1/4 tsp salt. Stir to combine and cook, stirring occasionally, until sprouts just begin to become tender, about 5 minutes.
3. Make 4 indentations in the brussels sprouts and carefully crack an egg into each one. Lightly sprinkle the tops of the eggs with salt and pepper. Cover the pan and keep covered until eggs are cooked, 4 to 8 minutes depending on how you like your eggs.
