Spicy Chicken Stir Fry with Peanut Sauce

2 chicken breasts, boneless, skinless
1.5 cup Asian Peanut sauce(recipe follows)
1 TBSP Cilantro, shredded cut
2 TBSP Peanuts, coarsely chopped
1 cup prepared Jasmine rice
Stir fried Veggies
Asian Peanut Sauce
Makes about 3 cups
2/3 cup Rice Vinegar
1 TBSP Soy Sauce
1.5 TBSP Garlic, chopped
1.5 TBSP Ginger, peeled/ chopped
3 fl oz (6 TBSP) Chili Garlic Sauce
3 fl oz (6 TBSP) Peanut Butter
1 TBSP Sriracha Sauce
3.5 TBSP Cooking Oil


Asian Peanut Sauce :

1. Put all ingredients EXCEPT OIL into the blender, cover and blend on medium until combined.

2. With the motor running slowly drizzle in the oil.

3. Cover and turn to high until completely smooth, about 30-60 seconds.

4. Serve or store in fridge for up to 14 days.

Chicken Dish:

1. Marinate the chicken form 15-20 minutes in 1/4 to 1/2 cup of the Asian peanut sauce.

2. Remove chicken from marinate and cook in a non stick skillet over medium low heat until the internal temperature reaches 165. About 5-8 minutes per side. Throw away any marinate left.

3. Allow Chicken to rest 10 minutes. Slice in half at a sharp angle. Serve with rice and veggies.

4. Garnish wit cilantro and peanuts. Pour sauce over or serve on the side.

Notes & Tips

The Asian peanut sauce goes great on chicken, shrimp, pork, veggies, wings or as a marinade.
