- 4 large eggs
- 8 ounces ground pork
- 1 tsp dried sage
- 1/4 tsp garlic powder
- 1/8 tsp crushed red pepper flakes
- salt & pepper
- 1/2 cup shredded sharp cheddar cheese
- 4 burrito-size flour tortillas

Directions
- Break the eggs into a bowl and whisk well using a fork then set aside.
- Add the pork, sage, garlic, crushed red pepper, and 1/4 tsp salt to a large skillet over medium-high heat. Cook while breaking up the pork until cooked through, about 5 minutes.
- Reduce the heat to medium and add the whisked eggs to the pan with the pork. Cook, stirring occasionally, until eggs are cooked through, about 3 minutes.
- Take the pan off the heat and sprinkle the cheese on top of the eggs. Cover the pan and set aside to allow the cheese to melt while you warm your tortillas.
- Fill the warmed tortillas evenly with the pork and egg mixture then roll up into burritos and serve.
