Spinach Caprese Salad

Spinach, grape tomatoes, fresh mozzarella, and fresh basil tossed in a white balsamic vinaigrette.

4 ounces fresh baby spinach leaves, stems trimmed
4 ounces fresh mozzarella, cubed
1 cup grape tomatoes, halved
1/4 cup freshly chopped basil leaves
1 TBSP white balsamic vinegar
1 TBSP olive oil
kosher salt
freshly ground pepper


1. Add the spinach in the bottom of a large serving bowl. Top with the mozzarella, tomatoes, and basil.

2. In a separate small bowl whisk together the vinegar, oil, a pinch of kosher salt, and several turns of freshly ground pepper. Drizzle the dressing over the salad. Sprinkle with extra salt & pepper if needed.
