2 10oz boxes frozen spinach thawed
16oz box oven ready lasagna
16oz fresh mozzarella
2 oz parmesan cheese
15oz ricotta cheese
1 egg
half a medium onion minced
1 tbsp vegetable oil
2 cloves garlic minced
38 oz tomato sauce
2 tbsp oregano
2 tsp basil
1 tsp parsley
salt and pepper


1. Add oil to a large pan over medium heat and saute onions for about 8 minutes. Add garlic and stir for about 30 more seconds. Turn heat to low add sauce, 1 tbsp oregano, 1 tsp basil and salt and pepper to taste. Stir and simmer for about 15 minutes.

2. Preheat oven to 350 degrees F. Drain spinach in colander and press to extract liquid.

3. In a large bowl combine spinach, ricotta, egg, 1 oz parmesan, 1 tsp parsley, dash black pepper and remaining oregano and basil.

4. In a 9x13 pan coat bottom with a little sauce. Cover with noodles, add half the ricotta mixture and spread evenly, add half the mozzarella and then spread on one third of the sauce. Add noodles again, then remaining ricotta mixture, then remaining mozzarella, then half the remaining tomato sauce. Add noodles once more and cover with remaining sauce. Top with remaining parmesan.

5. Cover pan with foil and bake for about 30 to 35 minutes. Let sit covered for 10 minutes before serving.
