Strawberry Cucumber Salad with Feta

1/2 pound little cucumbers
12 oz strawberries, sliced into rounds
2 oz feta cheese, crumbled (see notes)
1 TBSP white balsamic vinegar (see notes)
2 tsp honey


1. Peel the cucumber lengthwise creating stripes. Cut in half lengthwise and then into bite size slices. Put into a strainer and sprinkle with salt. Let sit 10 minutes.

2. Put the strawberries, vinegar, honey and cucumbers in a bowl and toss together.

3. Serve immediately or store in fridge for up to 6 hours before serving.

Notes & Tips

I love a sheep's milk feta in brine (Valabresso is my favorite)
Regular balsamic vinegar can be substituted if you don't have white, you may want to increase the honey.
