Stir together the warm milk and yeast in a large mixing bowl.
Add the flours, salt, and 1/4 cup olive oil and stir together until a dough is formed.
Knead the dough by hand while in the bowl for about 5 minutes.
Form the dough into a ball then place in a large clean bowl. Drizzle 1 TBSP of olive oil over the dough then flip around to coat in oil. Loosely cover the bowl and allow to rise in a warm place for about 40 minutes.
Brush about 1 TBSP of olive oil all around the inside bottom and sides of a 12-inch cast-iron pan.
Stretch the dough to fit inside the pan to the edges.
Sprinkle the feta cheese evenly over the dough then use your fingers to press the cheese into the dough.
Sprinkle the oregano evenly on the dough then drizzle the top with about 1 TBSP of olive oil.
Set the pan aside in a warm place to rise for about 30 more minutes.
Preheat the oven to 450°F
Place the pan in the preheated oven and bake for about 25 minutes.
