INGREDIENTS
2/3 cup fresh breadcrumbs
1/4 cup whole milk
1 large egg
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
salt & freshly ground black pepper
1 pound ground turkey (85/15)
1 TBSP olive oil
2 ounces fresh baby spinach, roughly chopped
1 pound uncooked orzo pasta
4 cups water
1 ounce freshly grated Parmesan cheese
2 TBSP fresh lemon juice

DIRECTIONS
Preheat the oven to 375°F.
Pull out a large baking sheet and set aside.
In a large bowl mix together the breadcrumbs, milk, egg, onion, garlic, oregano, 1 tsp salt, and 1/4 tsp black pepper until well combined.
Use your hands to mix in the ground turkey then form the turkey mixture into small balls roughly 1-inch in diameter and place on the baking sheet.
Bake the meatballs in the preheated oven for 12 minutes.
Take the meatballs out of the oven and set aside.
Heat the oil in a dutch oven or large pot over medium-high heat.
Add the spinach and orzo to the pot and cook while stirring for about 1 minute.
Stir in the water, 3/4 tsp salt, and 1/4 tsp pepper and bring to a boil.
Reduce the heat to medium-low and simmer uncovered, stirring often, about 12 minutes or until all the liquid is absorbed and the orzo is tender.
Take the pot off the heat and stir in the Parmesan cheese and lemon juice.
Taste the orzo and season with additional salt & pepper if necessary then stir the meatballs in with the orzo.
