INGREDIENTS

  • THE DOUGH:
  • 1 cup warm water
  • 1 packet active dry yeast (2 1/4 tsp)
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1/2 tsp salt
  • 3 TBSP olive oil, divided
  • THE TOPPINGS:
  • 1 TBSP olive oil
  • 8 ounces ground turkey
  • 1 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp granulated garlic
  • 1/8 tsp crushed red pepper flakes
  • 7 large eggs
  • 8 ounces sharp cheddar cheese, shredded



DIRECTIONS

  1. THE DOUGH:
  2. In a large bowl or bowl of a stand mixer pour in the warm water then sprinkle in the yeast. Add the flours, salt, and 1 TBSP of olive oil, mix until well combined and dough pulls away from sides of bowl.
  3. Knead the dough by hand on a lightly floured surface for about 5 minutes.
  4. Form the dough into a ball and place in a large bowl with 1 TBSP of olive oil. Flip the dough ball around to coat in the oil then loosely cover the bowl and put in a warm place to rise for about 45 minutes (If making the dough the day before: let the dough rise for 45 minutes then cover and refrigerate to use the next day).
  5. Preheat the oven to 450°F.
  6. Stretch or roll the dough to fit in a large pizza pan or 18x13-inch baking sheet then brush the top evenly with 1 TBSP of olive oil.
  7. Bake the dough in the preheated oven about 12 minutes.
  8. THE TOPPINGS:
  9. Mix together the turkey, sage, salt, pepper, garlic, and crushed red pepper in a bowl.
  10. Whisk the eggs in a bowl and set aside.
  11. Heat 1 TBSP olive oil in a large skillet over medium-high heat and cook the turkey sausage while breaking it up with a spatula until browned, about 5 minutes.
  12. Add the whisked eggs to the pan with the turkey and cook, stirring often, until eggs are almost but not quite set, around 2 minutes.
  13. Spread the egg and turkey mixture evenly on the pre-baked dough. Sprinkle evenly with the cheddar cheese then place back in the oven and bake until cheese is melted, about 3 more minutes.
