INGREDIENTS
1 medium English cucumber, peeled and diced small
12 ounces plain whole milk Greek yogurt
2 garlic cloves, minced
1 TBSP olive oil
1 tsp fresh lemon juice
1/4 tsp dried dill
salt & pepper
CONVERSION CALCULATOR
DIRECTIONS
Squeeze the diced cucumber in a paper towel to extract as much moisture as possible.
Mix the cucumber with the yogurt, garlic, olive oil, lemon juice, dill, 1/4 tsp salt and 1/8 tsp pepper in a bowl until well combined.
Season with additional salt & pepper if necessary. Serve or store in a covered container in the refrigerator.
