Remove the leaves from the cauliflower. Slice the stem to allow the cauliflower to stand up straight. Poke the cauliflower with a skewer all over about 15-20 times.
Mix the tahini, lemon juice, olive oil, honey, salt, pepper, garlic, and smoked paprika. Pour 3/4 of the mixture over the cauliflower and brush it all over the sides top and bottom. Sprinkle with sesame seeds.
Place the cauliflower on a baking sheet and place in the oven for 35 minutes.
Sprinkle with the parsley and serve with the remaining sauce for dipping.
