1 head cauliflower
1/2 cup tahini
2 TBSP lemon juice
1 TBSP extra virgin olive oil
1 tsp honey
1/2 tsp kosher salt
1/4 tsp pepper
1/4 tsp granulated garlic
1/8 tsp smoked paprika
1/4 tsp sesame seeds
1 TBSP chopped fresh parsley


1. Preheat the oven to 425 degrees F.

2. Remove the leaves from the cauliflower. Slice the stem to allow the cauliflower to stand up straight. Poke the cauliflower with a skewer all over about 15-20 times.

3. Mix the tahini, lemon juice, olive oil, honey, salt, pepper, garlic, and smoked paprika. Pour 3/4 of the mixture over the cauliflower and brush it all over the sides top and bottom. Sprinkle with sesame seeds.

4. Place the cauliflower on a baking sheet and place in the oven for 35 minutes.

5. Sprinkle with the parsley and serve with the remaining sauce for dipping.
