Creamy Garlicky Buttery Mashed Potatoes

1 lb Yukon gold potatoes, peeled and diced
8 TBSP unsalted butter
3/4 tsp salt
2 cloves garlic, crushed
1/4 cup half and half
salt and pepper to taste


1. Place diced potatoes in a pot and fill with water about an inch above potatoes. Add 1/2 tsp of the salt and bring to a boil over medium heat.

2. Cook potatoes until tender, 20 to 25 minutes depending on the size of the diced potatoes.

3. Stir the half and half and crushed garlic in a small sauce pan and heat over low heat until warm. Remove from heat and let sit so the half and half absorbs the garlic flavor.

4. Drain the potatoes and place in a large bowl. Add the butter and remaining salt to the potatoes and mash with a potato masher until well combined and free of lumps.

5. Strain the garlic from the half and half and stir it into the potatoes until creamy.

6. Add salt and pepper to taste.
