Oven Baked Turkey Meatball Subs

Ingredients
Meatballs:
1 lb ground turkey
2 eggs, beaten
1 tsp kosher salt
1/4 tsp pepper
1/4 tsp granulated garlic
1 tsp parsley
1 cup panko breadcrumbs
Sauce:
1 28-ounce can tomato puree
2 tsp garlic powder
1 tsp dried parsley
1/2 tsp dried oregano
1/2 tsp dried basil
1 tsp salt
1/4 tsp black pepper
Sandwich Prep:
1/2 lb Mozzarella Cheese, shredded
4 Sub Buns sliced open, but still hinged
2 TBSP butter, melted
Directions
1. Mix together all the meatball ingredients and allow to sit for 10 minutes.
2. Preheat oven to 425 degrees F.
3. Form 16 balls about 1.5 oz each from the mixture and set on to the baking sheet and bake for 15 minutes. (leave the oven on after removing the cooked meatballs)
4. In the meantime start the sauce: Pour the tomato puree into a dutch oven or large saucepan over medium-low heat. Stir in the remaining sauce ingredients and simmer for about 20 minutes, stirring occasionally.
5. Add the cooked meatballs to the sauce and gently toss to coat. Reduce the heat to low and cook the sauce and meatballs for about 5 more minutes.
6. Assemble the sandwiches: Place 4 meatballs into each bun, add 2-4 tablespoons of sauce over the meatballs. Top with the mozzarella cheese. Brush the sides of the buns with the melted butter.
7. Put the subs in the oven for 12-15 minutes or until the cheese is melted and starting to brown.
8. Serve the sandwiches topped with as much or as little of the remaining sauce.
