Cajun Chicken Breasts and Spicy Rice

Ingredients
2 boneless skinless chicken breasts
1 cup rice
1 large onion, diced
1 bell pepper, diced
1 1/2 cups chicken broth
2 cloves garlic, minced
1 TBSP canola oil
1 TBSP butter
2 TBSPs cajun seasoning
1/2 tsp cayenne
1/4 tsp salt
Directions
1. Pat chicken breasts dry with a paper towel and rub all over with all the cajun seasoning.
2. Add the oil and butter to a dutch oven and heat over medium high.
3. Place the chicken breasts in the hot oil and butter and cook about 3 minutes per side. Remove chicken from the dutch oven and set aside.
4. Reduce heat to medium and add the onion, pepper, rice, cayenne, salt and garlic. Cook for 1 minute while stirring.
5. Slowly stir in the chicken broth scraping the pot to get any stuck bits off the bottom.
6. Return the chicken breasts back in the dutch oven and bring to a boil.
7. Reduce heat to low, cover and simmer for about 25 minutes.
8. Serve.
