Crispy Portabella Fries

Ingredients
3 medium portabella, cleaned & sliced
salt & pepper
1/4 cup corn starch
1 large egg
1 TBSP mayonnaise
1 cup panko
1/4 cup Parmesan cheese
1/2 tsp granulated garlic
1 TBSP olive oil
Directions
1. Heat the oven to 425 degrees F.
2. In a pie plate combine 1 tsp salt, 1/4 tsp pepper and the cornstarch.
3. In a second pie plate whisk together the egg and the mayo.
4. In a third pie plate combine 1/2 tsp salt, 1/4 tsp pepper, panko, cheese, garlic, and oil.
5. Bread the slices of portabella by first dipping into cornstarch, then the egg, and finally thoroughly coating with the breadcrumb mixture.
6. Lay the breaded mushrooms in a single layer on a baking sheet lined with a wire rack.
7. Bake for 20 minutes, serve immediately.
