German Potato Salad

Ingredients
1 1/2 lbs yukon gold potatoes, halved
4 oz raw bacon, diced
1/4 cup celery, diced small
1/8 cup yellow onion, diced small
1/2 cup green onions, sliced thin
3 eggs, boiled and chopped
1/3 cup sugar
1/4 cup cider vinegar
salt and pepper
Directions
1. Salt some water in a pot and boil potatoes until they easily break up, about 15 to 20 minutes. Drain potatoes.
2. Brown the bacon in a dutch oven over medium heat then add the sugar and carefully add the vinegar.
3. Cook the bacon,sugar,vinegar mix until it becomes bubbly, about 5 minutes.
4. Add the potatoes and turn the heat to low, mash about half the potatoes.
5. Stir in the onion, celery, green onion and boiled eggs.
6. Season with salt and pepper and serve warm.
