Quinoa Tabouli Salad

Ingredients
1/2 cup uncooked quinoa
1/2 tsp kosher salt
1/2 cup cucumber, small dice
1/2 cup tomatoes, small dice
1/4 cup red onions, small dice
1/2 cup parsley, chopped
2 TBSP chopped cilantro
1 TBSP lemon juice
1 TBSP olive oil
Directions
1. Put the quinoa and 1 cup water in a pot and bring to a boil. Cover and turn to a low simmer for 15 minutes. Chill for 30 minutes.
2. Mix the quinoa and remaining ingredients in a bowl and serve or refrigerate for up to 48 hours.
