Shwarma Style Chicken Lettuce Wraps

Ground chicken is seasoned with Lebanese spices then served with leaves of lettuce, chopped vegetables and the traditional garlic sauce, Toum.

The Chicken:
1 lb ground chicken
2 TBSP olive oil
2 tsp cumin
2 tsp paprika
1/2 tsp cardamom
3/4 tsp turmeric
1/4 tsp granulated garlic
1/4 tsp cinnamon
1 pinch cayenne
1/2 tsp kosher salt
1 pinch black pepper
12-15 Bibb Lettuce leaves
tomato, diced
cucumber, diced
red onion, diced
parsley, chopped
Toum Garlic Sauce:
4 cloves fresh garlic
2 TBSP lemon juice
2 TBSP cold water
1/2 tsp kosher salt
1 cup peanut oil, cold (or other flavorless oil)


1. Mix all the chicken ingredients and allow to marinate in the refrigerator for 20 minutes.

2. Brown the chicken in a large skillet over medium high heat until well cooked.

3. Place the cooked chicken, lettuce leaves, and diced vegetables on platter. Sprinkle with parsley. Serve, allowing everyone to fill their lettuce leaves with chicken and toppings just the way they like.

Toum Garlic Sauce:

1.Place the garlic, lemon juice, cold water, and salt in a mug or glass. Use an immersion blender and blend until smooth. Slowly drizzle in the oil while the motor is running on the immersion blender, blending to a thick mayonnaise like consistency.
