Buffalo Mushroom Cheeseburger

This burger is made from a mixture of ground bison, a.k.a. buffalo, and ground cremini mushrooms. Topped with Havarti cheese and a whole grain mustard mayo.

12 oz ground bison
2 TBSP olive oil, separated
8 oz mushrooms, chopped fine (pulsed in food processor)
1/2 shallot, chopped
1 clove garlic, chopped
1/2 tsp fresh parsley, chopped
1/2 tsp kosher salt
1/2 tsp black pepper, fresh ground
1/2 cup mayonnaise
2 TBSP whole grain mustard
2 tsp minced shallot
pinch pepper
dash salt
1/4 tsp lemon juice
4 slices Havarti cheese
4 hamburger buns
Favorite toppings: lettuce, tomato, pickle, onion, etc


1. In a medium pan heat 1 tablespoon of the oil over medium heat and add the mushrooms, shallots, and garlic. Cook for 3-6 minutes, stirring frequently, until all the moisture is cooked out. Allow the mixture to cool.

2. In a mixing bowl combine the mushroom mixture and the bison. Mix together with your hands just until combined, do not over mix. Form 4 patties equal to the size of your bun in width. Cover and refrigerate for 20 minutes.

3. In the meantime mix all the ingredients for the sauce in a small dish and set in the refrigerator.

4. Heat a pan over medium high heat and add the remain tablespoon of oil.

5. Pat the burgers dry with a paper towel and season with the salt and pepper. Cook the burgers until well browned on one side then turn and cook until well browned and cooked through on the second side, about 4 minutes each side. Melt the cheese on the burgers.

6. Place the burgers on the buns and top with the sauce and your favorite toppings.
