1/3 cup uncooked rice
4 medium zucchini, cut in half lengthwise and centers hollowed out
1 lb ground beef
salt & pepper
1/2 granulated garlic
1/2 cup bell pepper, chopped
1/2 cup yellow onion, chopped
1 large egg
1/4 cup Parmesan cheese, shredded


1. Cook your rice according to package directions.

2. Place the hollowed zucchini on a baking sheet and heat the oven to 425 degrees F. Season the zucchini with salt and pepper. Cook the zucchini for 12 minutes in the oven.

3. In a bowl stir together the remaining ingredients: ground beef, pepper, onion, egg, cooked rice, Parmesan, 1 tsp salt, and 1/4 tsp pepper.

4. Pack the beef mixture into the zucchini halves. Bake until is beef is cooked through, about 30 minutes.
