Roasted Onion, Apple Cider and Thyme Vinaigrette

Ingredients

1 tsp honey
3 TBSP apple cider vinegar
1 tsp whole grain mustard
1 TBSP mayo
1/8 tsp thyme
1/8 tsp kosher salt
dash pepper
1/2 cup onions, diced fine
2/3 cup olive and canola oil blend
1 TBSP water

Directions

1. Preheat oven to 400 degrees F.

2. Toss onions in oil and place on a baking sheet. Roast the onions in the oven for 10 to 15 minutes or until edges become dark.

3. Place roasted onions and all other ingredients in a jar and shake to combine.
