Roasted Onion Vinaigrette

Ingredients
1/2 cup diced onion
2/3 cup peanut oil
1 tsp raw honey
3 TBSP apple cider vinegar
1 tsp whole grain mustard
1 TBSP mayonnaise
1/8 tsp dried thyme
1/8 tsp kosher salt
dash pepper
1 TBSP water
Directions
1. Preheat oven to 400 degrees F.
2. Toss onions in oil and place on a baking sheet. Roast the onions in the oven for 10 to 15 minutes or until edges become dark.
3. Place roasted onions and all other ingredients in a jar and shake to combine.
