Crock-Pot Refried Black Beans

An easy refried black bean recipe that slow cooks in the crock-pot all day. Technically not "refried" but delicious anyway.

Ingredients

1 pound dry black beans
1 large yellow onion, finely diced
6 medium garlic cloves, minced
1 TBSP cumin
1 TBSP chili powder
6 cups water
salt & pepper


Directions

1. Add the beans, onion, garlic, cumin, chili powder, water, and 1/2 tsp salt to the crock-pot and stir to combine.

2. Cover the crock-pot and cook on LOW for about 8 hours.

3. Drain the beans, reserving any of the liquid.

4. Transfer the drained beans to a large bowl and mash well with a potato masher adding as much of the reserved liquid until you reach your desired consistency. Season with salt and pepper to taste.
