whole chicken (6 to 7 pounds)
1 large lemon
1/2 cup freshly chopped dill
4 TBSP unsalted butter, softened
1 tsp salt
1/2 tsp pepper


1. Preheat the oven to 300°F.

2. Zest the lemon, place the zest in a small bowl and set aside. Cut the lemon into quarters and set aside.

3. Add the butter, dill, salt, and pepper to the bowl with the zest and mix to combine.

4. Pat the chicken dry with paper towels and place on a rack breast side up in a roasting pan.

5. Stuff the quartered lemon into the chicken cavity. Rub half the butter mixture under the skin of the chicken and rub the remaining half on the top of the skin.

6. Roast the chicken in the preheated oven for 2 hours. Increase heat to 400°F and continue roasting for 30 minutes or until chicken is cooked through.
