Pot Stickers:
1 lb ground pork
6 oz water chestnuts, chopped
2 egg whites
2 TBSP soy sauce
1 TBSP ginger, minced
1 TBSP garlic, minced
3 green onion shoots, thinly sliced
1 tsp black pepper
48 wonton wrappers
6 TBSP canola oil
Dipping Sauce:
1/4 cup soy sauce
2 TBSP rice vinegar
2 TBSP sherry
2 TBSP water
1 tsp chili garlic sauce
1 1/2 tsp sesame oil
1 green onion shoot, sliced


1. Mix the ground pork, water chestnuts, egg whites, soy sauce, ginger, garlic, green onion and pepper in a large bowl. Cover and refrigerate for at least 30 minutes.

2. Fill the center of the wonton wrappers with about 2 tsps of the pork mixture. Add a tiny amount of water to the edges and press to seal.

3. Heat a large cast-iron pan over medium high heat and brush on 2 TBSPs of the oil.

4. Brown the pot stickers on the flat sides for about 1 to 2 minutes.

5. Add 1/4 cup of water to the pan with the pot stickers and cover. Cook covered 1 to 2 minutes or until water evaporates.

6. Uncover and crisp up the bottoms of the pot stickers. (no need to turn over, only brown one side of the pot sticker)

7. Remove cooked pot stickers and place on a paper towel lined plate. Clean out pan and repeat with remaining oil and uncooked pot stickers.

8. Mix all the dipping sauce ingredients together and serve with the pot stickers.
