Ingredients

2 lbs baker's potatoes, peeled and cut into 1 inch pieces
1 1/2 TBSP unsalted butter
1/3 cup half & half
1 tsp kosher salt
1/4 tsp ground black pepper
4 TBSP Pesto

Directions

1. Place potatoes in a medium size pot and cover with cool water. Boil over high heat until tender, about 20 minutes.

2. Drain potatoes and let sit for about 2 minutes.

3. Place potatoes, butter, salt and pepper in a mixing bowl and mix (on medium speed if using a mixer) until butter is melted. Pour in the half & half and mix until incorporated.

4. Add the pesto and mix (on high speed if using a mixer) for about 20 minutes.
