Cottage Cheese Polenta

Ingredients
2 cups milk
3 cups water
2 TBSP butter
1 cup yellow cornmeal
1 tsp salt
1/4 tsp pepper
1 cup cottage cheese
1 TBSP chopped fresh basil
Directions
1. In a 2-quart saucepan bring milk, water, and butter to a low boil over medium heat.
2. Whisk in cornmeal, salt, and pepper and whisk until thoroughly combined.
3. Turn heat to low and cook, stirring often with a wooden spoon or spatula, for about 15 minutes.
4. Stir in the cottage cheese and cook for 5 minutes more, stirring continuously.
5. Stir in the basil and then serve.
