Arugula Salad with Nectarines and Feta

Ingredients
1 TBSP olive oil
1 TBSP white balsamic vinegar
1 tsp honey
1 tsp Dijon mustard
1/2 tsp kosher salt
dash fresh ground pepper
5 oz baby arugula
3 nectarines, peeled, pitted, and sliced
1/2 English cucumber, sliced thinly
1/4 cup loose mint leaves (chop a bit if they are large)
1/4 cup coarsely chopped basil leaves
1/2 cup feta cheese crumbles
Directions
1. In a bowl whisk together the oil, vinegar, honey, Dijon, salt, and pepper, remove one tablespoon of this mixture and place in a second bowl. Add the arugula to the remaining dressing and toss together.
2. In the second bowl toss together nectarines, cucumbers, mint, basil.
3. Place the arugula in a serving bowl and top with the nectarine mixture.
4. Garnish with feta cheese and serve immediately.
