1 lb ground beef
1 lb pork
1/2 tsp salt
1/2 tsp cayenne
2 tsp onion powder
1 1/2 TBSP garlic powder
1 TBSP chili powder
1/2 tsp black pepper
1 egg
1/2 cup ketchup
1/2 cup garlic chili sauce
1 TBSP canola oil

1. In a large bowl combine all ingredients except the oil and mix well with your hands.

2. Scoop a heaping amount of the mixture on a Tablespoon as a guide, about 1 to 1 1/2 ounces. Form into a ball and place on a baking sheet. Repeat until meatball mixture is gone. Should make about 30-36 balls.

3. Place form meatballs covered in the refrigerator for at least 1 hour.

4. Preheat oven to 450° F. Heat the oil in a saute pan until beginning to smoke.

5. Cook meatballs in batches in the pan for about 6 minutes total flipping every minute or two to ensure even browning.

6. Place meatballs on a paper towel lined plate to drain off any excess oil.

7. Mix the ketchup and chili garlic sauce in a large bowl until well combined.

8. One by one dip meatballs in the sauce and coat well then place them on a wire rack above a sheet pan.

9. Bake meatballs in the preheated oven for about 25 minutes.

10. Makes about 36 meatballs.
