8 ounces cream cheese, softened
1/2 cup pine nuts
2 cloves of garlic, peeled and chopped
1 cup freshly grated Parmesan cheese
1 cup packed fresh basil leaves
2 TBSP olive oil
1/4 tsp salt
1/8 tsp fresh ground pepper
6 ounces fresh mozzarella cheese, cubed
1/2 cup cherry tomatoes, quartered
toasted baguette slices and/or crackers for serving


1. Preheat oven to 400°F.

2. Add the cream cheese, pine nuts, garlic, Parmesan, and basil leaves to a food processor and pulse until smooth. Scrape the mixture into a mixing bowl and stir in the olive oil, salt, and pepper. Add the cubed mozzarella and tomatoes and stir to combine.

3. Scrape mixture into a pie plate or ceramic tart pan and bake until bubbly and beginning to brown, about 15 minutes. Serve immediately with the toasted bread and/or crackers.
