Ingredients

1 large egg
2/3 cup whole milk
1/2 tsp salt
1/3 cup peanut oil
1/2 cup shredded Parmesan cheese
1 1/2 cups tapioca flour

Directions

1. Preheat the oven to 350 degrees F.

2. In a medium bowl whisk together egg, milk, salt, and oil until well blended.

3. Add the Parmesan cheese and tapioca flour and whisk together.

4. Fill 24 mini muffin cups with the mix. Each cup should be about 2/3 full.

5. Place in the center of the oven and bake for 20-25 minutes until golden brown.
