Homemade Red Curry Paste
Servings: makes about 1 cup
Total Time: 10 minutes
Ingredients
6 shallots, peeled and chopped
4 garlic cloves, peeled
2 lemongrass stalks, trimmed and chopped
2 TBSP soy sauce
2 TBSP tomato paste
1 TBSP freshly minced ginger
zest from 1 lime
juice from 1 lime
1/2 tsp ground black pepper
1/2 tsp ground coriander
1 tsp cayenne pepper
1 tsp cumin
Directions
1. Combine all ingredients in a food processor and pulse until a paste is formed.
Notes/Tips
Store in an air-tight container in the fridge for up to 1 month or freeze for up to 6 months.
