Feta Crusted Roast Chicken

Ingredients
8 ounces feta cheese, crumbled
1 tsp crushed red pepper
1 tsp garlic powder
2 TBSP fresh lemon juice
1/2 tsp salt
1/2 tsp freshly cracked pepper
1/4 cup olive oil
1 whole chicken (about 4 pounds)
Directions
1. Preheat oven to 375°F. Line a rimmed baking sheet with parchment paper.
2. Add the feta, crushed red pepper, garlic powder, lemon juice, salt, and pepper to a food processor and pulse until thoroughly combined and cheese is finely crumbled. Transfer mixture to a bowl, stir in the olive oil and set aside.
3. Remove giblets from chicken cavity, rinse the chicken under cold water and pat dry with paper towels. Rub feta mixture all over the outside of the chicken and under the skin. Set the chicken breast side up on the lined baking sheet. Bake in the preheated oven for about 1 hour and 15 minutes or until chicken has an internal temperature of 165°F.
